Gambaran Keberadaan Jamur Kontaminan Pada Daging Ikan Giling Yang Dijual Di Pasar Tradisional Kota Palembang Tahun 2013

Abstract

Ikan dapat digunakan sebagai bahan baku produk olahan makanan, namun sebelumnya ikan harus diolah dengan proses penggilingan.Dari daging ikan yang telah digiling tadi memungkinkan terkontaminasi jamur. Penelitian ini mencakup bidang mikologi. Yang bertujuan untuk mengetahui gambaran keberadaan jamur kontaminan pada daging ikan giling yang dijual di pasar tradisional di Kota Palembang Tahun 2013. Jenis penelitian yang digunakan adalah deskriptif. Jumlah sampel yang diperiksa sebanyak 26 sampel yang diambil secara accidental dari Pasar 7 Ulu, Cinde, Kuto, Kebon Semai, Sekip, Lemabang dan Pasar KM 5. Dari 26 sampel yang diteliti didapat 14 sampel daging ikan giling (51,9%) positif jamur kontaminan. Dari 4 sampel daging ikan giling jenis Sarden 2 sampel (50%) positif jamur kontaminan. Dari 11 sampel daging ikan giling jenis Tenggiri 6 sampel (54,5%) positif jamur kontaminan. Dari 2 sampel jenis Gabus 100% positif jamur kontaminan. Dari 7
sampel daging ikan giling jenis Kakap 4 sampel (57,1%) positif jamur kontaminan. Sedangkan 2 sampel jenis ikan Parang–Parang semua negatif. Dari 21 sampel daging ikan giling dengan temperatur 250C 11 sampel (52,4%) positif jamur kontaminan. Sedangkan dari 5 sampel daging ikan giling dengan temperatur >250C 3 sampel (60%) positif jamur kontaminan. Dari 23 sampel daging ikan giling yang kemasannya terbuka 14 sampel (60,9%) positif jamur kontaminan dan dari 3 sampel (100%) daging ikan giling yang kemasannya tertutup negatif jamur kontaminan. Dari 12 sampel daging ikan giling yang waktu penjualannya 1 jam, 7 sampel (58,3%) positif jamur kontaminan. Sedangkan 14 sampel daging ikan giling yang waktu penjualannya >1 jam, 7 sampel (50,0%) positif terkontaminasi jamur kontaminan. Disarankan bagi pedagang daging ikan giling hendaknya memperhatikan jenis ikan yang dijual, kebersihan alat-alat yang digunakan, proses pengolahan, tempat dan lamanya penyimpanan. Bagi konsumen, hendaknya memasak daging ikan giling sebelum secara sempurna dan memperhatikan kebersihan alat-alat masak.
