Abstract

Latar Belakang:Aspergillus niger berperan penting dalam teknologiindustri pangan karena memiliki banyak manfaat, diantaranya: dipakai dalam proses produksi asam sitrat, untuk menganalisa metabolisme pada jamur dan aktivitas enzimatis. Jamur A.niger ini juga bersifat patogen, karenamenjadipenyebab utama terjadinya otomikosis. Medium pertumbuhan yang umum digunakan untukjamur A.niger ialah SDA (Saboroud Dextrose Agar). SDA merupakan modifikasi dari Dextrose Agar dengan Sabouraud. SDA berfungsi untuk media pertumbuhan jamur dan menghambat pertumbuhan bakteri. Beras merah dapat menjadi salah satualternatif bahan pokok pembuatan medium pertumbuhan jamur karena mengandung karbohidrat, protein, glutein, dan vitamin yang tinggi.

Metode:Metode yang digunakandalampenelitianiniadalahmetodeeksperimental, dimana untuk mengetahui pertumbuhan A.niger dilakukan dengan pengamatan diameter koloni pada Air Cucian Beras Merah Agar (ACBMA) di konsentrasi 10%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90% dan 100%. Analisis data yang digunakan ialah analisis deskriptif menggunakan grafik garis.

Hasil:Hasil yang didapat dari penelitian ini ialah media alternatif dari air cucian beras merah dapat digunakan sebagai media alternatif SDA untuk pertumbuhan jamur Aspergillus niger pada konsentrasi 90% dimana pada konsentrasi tersebut pertumbuhan koloni jamur menyerupai perumbuhan pada media kontrol SDA.

Kesimpulan: Agar cucian beras merah dapat digunakan sebagai media alternatif SDA untuk pertumbuhan jamur Aspergillus niger
